Lympstone Manor, Exmouth – Contemporary Country House Chic
Overlooking the mouth of the Exe estuary, Lympstone Manor is a Grade II-listed Georgian manor house that has been transformed over the past 18 months into a luxury country house hotel. It’s the brainchild of chef-patron Michael Caines MBE, who - after 21 years at Gidleigh Park, where he gained two Michelin stars – has realised his dream of creating his very own 21st century country house hotel.
The property sits in 28 acres of grounds, part of which will be planted as a vineyard producing their own sparkling wine. There are three individually styled dining rooms - Powderham, Mamhead and Berry Head - and 21 luxurious rooms and suites, each named after birds of the estuary and decorated with original artwork by local artist Rachel Toll.
Utilising the best produce the south west has to offer, Michael and his kitchen team offer a la carte (£115pp), an estuary tasting menu (£130) and a signature tasting menu (£140) in the evening, along with a two- or three-course lunch menu (£45/£55) and afternoon tea. Lympstone Manor can also boast a world class, 600-bin wine list.
