Murmur, Brighton – Beachfront Dining

Michael Bremner, head chef and owner of the Michelin Bib Gourmand-awarded restaurant 64 Degrees in Brighton has opened a new beach-front restaurant with a view overlooking the old West Pier. Called Murmur, it takes its name from murmuration – the shapes that starlings take as they flock and fly between Brighton’s two piers.

The restaurant serves ‘healthy and honest food’ in a casual environment for breakfast, lunch and dinner. He wants it to be the sort of place where he and his fiancé, Carla Grassy, can take their two young girls to go and eat. Carla worked alongside the design team for the restaurant’s interiors and front-of-house design and has been integral to the opening of the second restaurant. Murmur has 37 covers inside and a further 40 covers on the terrace overlooking the beach. There’s a relaxed, social vibe and you can get a good quality three-course lunch for £30 per head, complemented by an excellent wine list with plenty of choice by the glass.

Scottish chef Bremner recently reached the final of BBC Two’s Great British Menu where he beat 23 other high-profile UK chefs for one of four places to cook at a summer banquet celebrating 140 years of Wimbledon tennis. His dish, The Grass is Greener, was inspired by Wimbledon being the only Grand Slam tennis tournament still played on grass. It featured ox tongue topped with a jus-filled ravioli, served with pickled summer vegetables.
