The thing that makes this restaurant is the charismatic owner. He is not only the genial host but oversees the kitchen too. He is passionate about Sicilian food and drink. It was very interesting to see his collection of herbs collected from the mountain by his summer house in Sicily. His wine cellar was a labour of love too! I had a gorgeous dish of aubergine, ham, and mozzarella with an unusual sicilan pasta. I guess the proof of the quality of Etna is the fact that its the oldest restaurant in Lancaster opening its doors in 1975 and still with the same man at the helm!! A must when in town.
