Eat fish and chips regularly both by the coast and inland. I have to say fish and chips from Carlos where the best I've ever had. The tartar sauce that comes with the meal (which i believe was homemade) complemented the fish perfectly. Only problem was portions were abit too big but cant complain other than that.

Just one suggestion dress your cooking staff in whites and your waiting staff in an apron ITS ALL ABOUT PRESENTATION.Food excellent service friendly and efficient .fish not quite as good as Carlos Alnwick but that will come I Shall return.
