The Old School BBQ Bus is exactly what it says on the tin – a yellow American high-school bus, imported from Arizona, and converted into a BBQ kitchen specialising in slow-smoked southern BBQ. And it’s now found a permanent home on a one-acre plot at Hollinwood, between Oldham and Failsworth, where there's a full BBQ pit kitchen, covered seating, a 20-foot bar, pizza shack, a beer garden, WC facilities and a live music stage. It’s all the brainchild of local boy Mark Fairley who made the pilgrimage to the States to learn from the best in the business and bring it back to north Manchester. It's also now the permanent home of the Eccles Cake Burger – two Eccles cakes, six ounces of steak mince, two slices of home-smoked streaky bacon, a slab of Monterey Jack cheese and a slurp of Maple syrup. Vegetarian and vegan options too as well as moonshine!
