When my wife and I are in Stirling we usually try to dine at the Golden Lion. We have stayed there also a few times in the past and the breakfast was superb. We were at the Castle, so booked in for dinner. The staff were very friendly and seated us even though we were a little early. The first course came very quickly and was very tasty. The vegetables were a little undercooked and so a little hard even for my knife to go through. We asked for a sweet menu, got it and then waited an age to be asked what we were having. The girl came with the sweets and we had to ask for cutlery. We had tea next and had to ask for milk. The servers looked very young and basically seemed to be learning on the job. It might have been our bad luck that this was their first night working, but it was a Saturday and maybe training should happen when they are not so busy.
